This is a really lovely autumnal recipe to take our blackberry conserve and make your own ketchup. The ketchup is great with bangers or as a substitute for apple sauce in a pulled pork roll.
4 tbsp Blackberry Conserve
2 apples, finely diced
2 shallots, finely diced
100ml red wine vinegar
A pinch of mustard seeds
1 tbsp grated ginger
1 cinnamon stick
Additional foraged berries (blackberries, elderberries, rowan, or sloes work well)
1. Once you’ve prepared your apple and shallots, this ketchup is really easy to make. Simply combine all the ingredients in a pan with a small splash of oil and cook on a low heat for 20-30 minutes.
2. Next, blend until smooth in a food processor.
3. Pour your hot ketchup into an empty jam jar or other container and allow to cool.
4. Serve with a garnish of blackberries and enjoy for a redefined sausage sandwich!
